Hands up who doesn’t like a bit of comfort food, or something special to go with a good steak. Try this easy recipe to create something both conforming and special… We have used cracking Scottish cheese, Mature Anster from St Andrews Farm House Cheese
Press heat the oven to 220 oC or 200 oC fan assisted.
Pour a good glug of ‘cold pressed rapeseed oil’ onto a back try and put in oven to heat up.
Cut potatoes into wedges and pat dry.
When the ‘cold pressed rapeseed oil’ is hot add wedges and cook for 45 minutes, giving them a good shake half way through cooking.
Place the cokked wedges in a bowl, sprinkle with salt and pepper, shave over a good portion of cheese and drizzle with ‘truffle infused oil’.
