For salads I would say let your imagination run wild, or just pick up your favourites from the farmers’ market or green grocers. This suggestion shows how our ‘dressings’ or more than just dressing and be used in many ways including as a marinade. You could look to roast, pan fry or even BBQ the chicken, I guess the day may dictate what you do..
Cut the chicken into strips.
Place in a bowl and cover with ‘chilli & red pepper’ dressing, cover and place in the fridge to marinate for 4 hours.
Cook on the chicken using which ever method suits.
Assemble the salad of your have selected (we used spinach leaves, avocado and red peppers).
Place cooked chicken on top of the salad
And finally drizzle with ‘chilli & red pepper’ dressing.
